Oh man - I’m so excited about this new cookbook from Christina Tosi of Milkbar fame. Her first cookbook was incredible, and I made all kinds of stuff out of it, like her mouthwatering Corn Cookies and rich Chocolate Chocolate Cookies!! Compost Cookies are also a famous staple at the bakery and so I DEFINITELY wanted to make this loaf cake from the cookbook first. Compost Cookies are pretty much the only dessert with coffee in it that I will tolerate (also these Mocha Madeleines) and with so many other goodies inside of it, it’s really a taste all it’s own. The cake is dotted with chocolate chips and butter scotch chips and coffee grounds and then topped with potato chips, pretzels, and graham cracker crumbs. It has the same signature taste as the OG cookie, but I can feel better about eating it for breakfast (right? right.).
